One of the highlights on our Memorial Weekend Grill Out was our Wild Boar BBQ!!!
A couple of weeks before our outdoor party, my husband, Barry went on a Wild Boar Hunt somewhere outside of Harrisburg. Him and his fellow hunters each got a wild boar...each weighed in about 325 lbs or more! Barry got one of the largest and he got it butchered into different cuts from roasts, porkchops and steaks. Roughly about 200 lbs was the take home weight. Some were made into ham, bacon, Sweet Italian sausage and smoked hocks and etc. So far we had the bacon, Sweet Italian sausage and the roast made into a BBQ and everything tasted great. No gamey taste at all. It's like eating pork staright from the market. But I guess it all depends how it was made. The marinade for the BBQ surely made it tender and appetizing.
Here's my recipe...enjoy!!!
Ingredients:
10 lbs. Wild Boar Loin/Roast (Sliced into Strips and Tenderized)
2 Cans of Sprite
2 cups brown sugar
1 1/2 cup soy sauce
1 1/2 cup vinegar
6 (or more) Tablespoons minced garlic
4 (or more) Tablespoons Worcestershire Sauce
Black Pepper
4-6 Tbsp Lemon Juice
Ketchup
EVOO
60 +/- Bamboo Skewers (Soaked in Hot Water Overnight)
Directions:
Slice loin/roasts into thin strips, tenderize with a mallet. Place them in a large container and add all the dry and wet ingredients. Mix well. Marinate for a couple of days or overnight in the refrigerator.
Soak Bamboo Skewers in hot water overnight. Get your hubby or a couple of friends to help you thread the meat strips into the bamboo skewers. LOL
Basting Sauce: Take the remaining marinade and pour it into a sauce pan. Add a little bit of ketchup, worcestershire, brown sugar, EVOO or hot sauce (depends on your taste). Reduce sauce in low heat for about an hour or so. Stirring from time to time to prevent from burning. When the sauce becomes thick, remove from heat and save in a glass jar or plastic container. Refrigerate before use.
Grill BBQ on each side for 4-5 minutes or until golden brown. Baste on each side. Serve while hot!!!
This is one flavorful and tender Wild Boar BBQ!!!
