This is probably the most easiest side vegetable dish I've ever made and it tastes great, too! This is also a great substitute for mashed potatoes...low carb and highly nutritious!!! So creamy...
Ingredients:
Cauliflower Head
Chopped Onions
Chopped Garlic
EVOO
Mayonnaise (1/4 or 1/2 cup depending on the size of the cauliflower and your taste)
Grated Parmesan Cheese
Directions:
Boil water with salt. Wash cauliflower head and remove leaves and stem from the bottom of the vegetable. Dunk cauliflower in boiling water. Let it boil for 10-15 minutes until soft or until tender. Drain cauliflower in a colander. Place it back in the pot.
In a saucepan, saute garlic and onions in EVOO. Pour this over the cauliflower. Add mayonnaise. Mash it together with a potato masher, hand blender or food processor. Then place in a baking dish. Add grated parmessan cheese on top and bake in the oven at 350 degrees F for about twenty minutes or until the top is nice and crusty.
