Have you ever eaten at Don Pablo's, a Mexican Style Restaurant? Well, when you get the chance you got to try their Sweet Corn Cake. Every time Barry and I go there for lunch or dinner that's the only thing we look forward to with our meal and we usually get them doubled and forget about the other side dishes they offer...hehehe. This sweet corn cake is really too die for!
For years, I've been wanting to re-create this dish in the comforts of our home and I finally found a recipe online that's close to its taste and texture.
So here's the recipe...I had to quadruple this recipe for the Chicken BBQ Party we had yesterday! Hope you'll try it one day and go Ahhhhhh...
Ingredients:
1/2 cup softened butter (do not substitute)
1/3 cup corn flour (Masa Harina)
1/4 cup water
1 1/2 cup Frozen Corn (thawed and half of it chopped in a food processor and the rest leave them chunky)
1/4 cup corn meal
1/3 cup sugar
2 tbsp heavy whipping cream (or regular milk - I actually used more cream than this recipe called for...more than doubled to get it really soft and creamy)
1/4 tsp salt
1/2 tsp baking powder
Directions:
In a medium bowl beat butter until creamy. Add corn flour and water and beat until well mixed. Stir in corn.
In a separate bowl, mix cornmeal, sugar, cream, salt and baking powder. Add to corn mixture and stir to combine. Pour batter into an ungreased 8x8 pan. Cover tightly with aluminum foil. Place pan into a 9 x 13 baking pan that is filled 1/3 with hot water.
Bake at 350 for 50 - 60 minutes. Allow to cool 10 minutes. Use an ice cream scoop to remove. Serve warm.
***The secret to getting it creamy like Don Pablo's is the steaming so it is important to bake it covered and inside a pan of water or create a double broiler, take a 5 qt casserole pan with the corn mixture and place it in a bigger casserole pan or cast iron pan halfway filled with water.

ReplyDeleteWe now have a Pinoy Restaurant in Baton Rouge. It opened way after Twinkle and Bullet left, but this is really good stuff.
I also love the adobo and then there was something else, it was somekind of vegetable cake thing,, I did not like it ,, not one bit.
I think of bullet and twinkle all the time, so doe A. I hate to tell you HCMS is still rocking around here. I was even in an apartment complex tday, they had even written a note on the application that they were willing to pay more money than the rent is really for.
Let Twinkle know the place we went to dinner that horrible night is willing to help us on the HCMS situation.
