Steelhead with Garlic and Dill Pesto















Steelhead or a also known as an Ocean Trout has become a favorite fish of ours to eat. Its flesh is comparable to an Alaskan salmon with pink colored meat, but with less fishy taste. I normally find them this time around at our local Sam's Club and when I do see them, I try to stock some in our freezer for the winter months.

I have always love the traditional pesto sauce with basil and pine nuts, but for tonight's Steelhead I decided to do something different. Since Dill goes well with fish especially with Salmon or Steelhead, I figured to pair it up with some chopped garlic and make it into a pesto sauce, then use it as a marinade. Just the thought of this pesto sauce is starting to make me salivate...

The end result was better than I thought. The sweet scent of the dill mixed in with the garlic, olive oil, Parmesan cheese and white wine was just amazing! My fillet of fish was cooked just right. It was moist, flaky and so flavorful.

Ingredients:
A fillet of Steelhead
Garlic Head
a bunch of fresh dill
1/4 to 1/2 cup Olive Oil
1/4 cup White Wine
1/4 cup of Parmesan Cheese
Lemon Seasoning or Lemon Juice
Salt and Pepper

Directions:
Season the fillet of fish with salt and pepper. Place the fillet on a baking pan. In a food processor, mince garlic and dill. Then slowly add olive oil, Parmesan cheese and white wine. Blend well. Pour it over the fish. Cover it with plastic wrap. Marinate for a couple of hours in the refrigerator.

Bake at 375 degrees F for 15-20 minutes depending on the thickness of the fish. Remove from the oven and sprinkle it with lemon seasoning or squeeze with fresh lemon juice. Serve with brown rice and steamed veggies.
