
Hmmm...this recipe usually calls for Milkfish, Lapu-Lapu (Grouper) or Red Snapper, but since I only have Steelhead on hand, I guess this will do.
Steelhead is actually synonymous to a Rainbow Trout, but Steelhead like Salmon lives in the ocean and goes back to the river (where they come from) to spawn. Steelhead tastes like an Alaskan Salmon, its meat is bright pink, but less fishy taste than its counterparts. However, Steelhead looks like a Rainbow Trout, but with a more silvery scales and bright pink hues on their sides. A very pretty fish to say the least and they tastes good, too! I actually never tasted a Steelhead before until recently. I found my fresh Steelhead from Sam's Club couple of months ago of all places! I bought a few fillets and saved the rest in my freezer. So, ever since then, I've been hooked! I like them broiled and seasoned with Lemon Pepper and then drizzled with EVOO. The result is wonderful and a healthy dish!
For the past couple of years, Barry has been taking me Salmon Fishing in Upstate New York in the Fall months. During this time, there's also a Steelhead Winter-Run from November to April or the Summer-Run as early as May to October! I haven't caught one yet, but I've seen other guys that have gotten one before and I tend to envy them. Maybe next time I'll catch one on a fly? Barry has gotten a quite few hooks when we were out, but has gotten some before. They're a strong fish and will fight like hell!
Anyway, for dinner tonight I decided to make a fillet of Steelhead with black beans and tofu and I just wanted to share my recipe with you...maybe next time, I'll send you a photo of me with a big Steelhead on my arms...:-)
Ingredients:
A big fillet of Steelhead
Salt and Pepper
Cornstarch
Vegetable Oil or EVOO
Tofu (Tokwa)
Cornstarch
Vegetable Oil or EVOO
1 Tbsp of Ginger, minced
1 Tbsp of Scallions, minced
Half of Green Bell Peppers, chopped
Cloves of Garlic, minced
1 can of black beans (Tausi), drained
1/2-1 Cup water and 2 Tbsp of Cornstarch
1 Onion, sliced
1 Tomato, chopped
Directions:
Season Steelhead with salt and pepper. Then, rub some cornstarch. Heat oil on a big skillet. Fry steelhead on both sides for a couple of minutes. Set aside. Or just bake Steelhead at 350 degrees for 20 minutes, then broil for 5 minutes or until golden brown.
Rub cornstarch on tofu. Fry on vegetable oil or EVOO, but make sure not to over-fry it. Set aside. Slice into cubes.
On the same skillet, saute garlic and garlic. Add scallions, ginger, tomatoes and black beans. Mix cornstarch in a half a cup of water. Then add to the pan. Stir continously until the sauce thickens. Add fried fish and tofu. Then simmer for about 3-5 minutes. Or just drizzle the sauce over the fish and add fried tofu.
