Marvelous Meatball Lasagna
















Do you ever get tired of eating plain ol' spaghetti & meatballs for dinner? Sometimes I do, so here is a new way of turning your meatballs and tomato sauce into a lasagna dish! This is oozing with some yummy goodness!!! With few added ingredients, you'll have yourself a very hearty meal and more than enough servings for two in a week! You can always freeze the rest and reheat them for those lazy days.

Now I can sit back and relax. I don't need to touch anything in my kitchen until next week. A kitchen diva like me needs to take a break from time to time, you know? Not unless I get an itch to make something new from now 'til then.

Ingredients:
Box of uncooked lasagna
Meatballs, sliced in half or more depending on the size of the meatball for easy layering
Spaghetti/Tomato Sauce (Please refer to my previous recipe on Meatball with Thin Spaghetti)
Grated Mozzarella Cheese
Grated Parmesan Cheese

Buttered Garlic-Thyme Toasts:
Bread
Butter
Thyme
Garlic Salt

Garden Salad:
Spring Mix Salad
Vidalia Onion Salad Dressing
Croutons
Toasted Almonds

Directions:
Boil water in a large stock pot. Cook lasagna noodles by following the instructions on the box.

Make meatballs with tomato sauce. Refer to my previous meatball recipe (http://mariaspfloro.multiply.com/recipes/item/73/Meatballs_with_Thin_Spaghetti...My_Way_and_the_Easy_Way).

Spread a thin layer of tomato sauce on the bottom of a large lasagna pan/baking dish. Start with first layer of lasagna noodles, add sauce and meatballs. Sprinkle with cheese. Repeat process to the last three pieces of your lasagna noodles (about 3-4 layers). Add the remaining sauce and meatballs on top. Sprinkle cheese. Lightly cover with tin foil to prevent cheese from burning or being overcooked. Bake for 30-35 minutes at 350 degrees. Remove from the oven. Let it rest for a few minutes before serving. Serve it with a side of salad, buttered thyme toast and a glass of Shiraz.
