Easy Egg Frittata















Well, after making Empanadas for our Superbowl party last weekend, I had some filling left over. So this morning, I turned it into a Frittata for brunch and served it with buttered toasts and Elderberry jam. Yum-O!

This is way better than a bowl of Wheaties and this meal gives you a full energy boost for the weekend ahead! And as you can see, I waste nothing in our household and every thing is recycled into something better.

Frittata is basically an Omelette filled with various kinds of meats, cheeses and vegetables. The possibilities are endless when it comes to Frittata's and its up to you on what you want on it!

Once in awhile, I make my Frittata with a ready-made pie crust, which even makes it more yummier...the flakier, the better! :-) My other Frittata favorites are spinach with feta cheese or anything with bacon, sausage, tomatoes and sweet peppers!

Ingredients:
6 to 8 eggs
2 - 4 Tbsp Milk
Salt and Pepper
Cheddar Cheese
Leftover Ground Beef with potatoes and veggies
Olive Oil

Directions:
Beat eggs and milk together. Season with salt and pepper. In a skillet, heat up olive oil. Pour beaten eggs into the pan. Add filling (ground beef & veggies) and let it cook half way through for a few minutes. Remove skillet from the stove top, sprinkle cheese on top and transfer it in the oven @ 350 degrees F. Bake or grill for 5-8 minutes until cheese melts and eggs are fully set. Serve with buttered toasts and jelly.
