Fettucine Alfredo with Shrimp, Chorizo and Broccoli















Summer season has begun and my recipe blog went on hiatus for a few weeks. Been so hot in here lately and the last thing I want to do is to be in a hot kitchen...but don't despair (or perspire)...hehehe...I'm somewhat back into the kitchen loop! LOL

Here's a quick summer creamy pasta meal...

Ingredients:
Fettucine or Angel Hair Pasta
Alfredo Sauce (anything will do, but I like to use Bertolli)
Frozen Shrimp (Peeled, thawed)
Sliced Chorizo de Bilbao (Chinese Sausage)
Broccoli Crown (Sliced)
Chopped Onions
Chopped Garlic
EVOO
Grated Parmessan Cheese

Directions:
Cook Angel Hair Pasta, drain, drizzle with EVOO and set aside. In a sauce pan, saute onions and garlic with EVOO. Add shrimp and cook for a few minutes or until it turns pink. Add sliced chorizo, cook until slightly fried. Then, add broccoli florets. Cover for a few minutes until broccoli is nice and slightly tender, but still crisp. Lastly, pour a whole jar of alfredo sauce (white cheese sauce). Let it simmer. Then toss pasta into sauce. Sprinkle with parmessan cheese. Serve with garlic bread and a tall cold Iced Tea!
