Soft Taco Night!
Yes, it's soft tacos for dinner at the Bernstein's tonight! WooHoo!
It's been a while since I posted recipes online and boy, how I miss cooking and blogging! It's not that I haven't been cooking at all lately. I guess, we have been so busy the past few days, weeks, and months that most of the things I cook at home were mostly repeats, and not even bloggable (if that's even a word), if you know what I mean?!? It's truly been a very busy summer for my husband and I that we couldn't even believe summer has come and gone already!
Well, this recipe is nothing fancy and I'm sure most of you out there have done tacos at home one way or the other, and referred to it as go-to and easy to-do dinner entrée! Because truthfully, a platter of tacos is effortless to make. They're delicious, nutritious (in my terms...hehehe) and economical, too! And with all that leftovers, you can even make a taco salad the next day for lunch. Just add some cracked hard shell tacos or nachos, and walah, you got yourself an instant crunchy taco salad as well! YUM-MY!
Anyway, here's my version of a Mexican taco...so, instead of running to the nearest Taco Bell or El Pollo Loco for your next taco fix, please do try this at home first (if you haven't done so) and I'm sure you'll be hooked on your own cooking! :-)
P.S. If you noticed, I used Ortega products for this recipe. I've always used their products and love 'em all! So, if you like a different brand that's fine, too, whichever you prefer. =))
Ingredients:
1 lb of Ground Beef
1 small Sweet Onions
1 Packet of Ortega Taco Seasoning
Soft Flour Tortilla, warmed or Hard Tacos, if you prefer
1 Bunch of Romaine Lettuce, Shredded
2 Roma Tomatoes, diced
Shredded Sharp Cheddar Cheese
Sour Cream
Ortega Taco Sauce (Medium)
Green Chillies or Jalapeno Peppers, seeded and diced (Optional)
Cilantro, chopped
Directions:
In a large skillet, brown ground beef. Drain excess oil if necessary. Create a well in the middle of the pan while keeping the meat on the side of the pan, toss in the chopped onions. Saute until translucent and gradually mix them in with the browned beef. Slowly stir in taco seasoning (dissolved in warm water) with the beef. Mix well and set aside until ready to serve.
In the meantime while the ground beef is cooking, create separate bowls of shredded lettuce, chopped tomatoes, shredded cheddar cheese and sour cream.
Create a soft or hard taco by adding a few spoonfuls of ground meat on the flour tortilla. Add lettuce, tomatoes, cheese, and a dollop of sour cream on top, and then drizzle with taco sauce. Garnish with fresh cilantro and/or green chillies/jalapenos. So, there you have it, Muchachos and Muchachas...easy tacos in the comforts of your home. Enjoy!!!
