Steelhead with Chipotle Peanut Sauce served with Sesame Green Beans

I actually never heard of a Steelhead before until I started fly fishing with my hubby few years ago. Steelhead is basically a sea-run trout. In the Fall when they are ready to spawn, they swim up the river and you'll see them mixed in with the Atlantic Salmon in Upstate New York. They're a wonderful looking fish. Too bad I've never caught a Steelhead yet, but I've seen quite a few of them caught while Salmon Fishing and I just love their silvery skin with pinkish hues like a Rainbow Trout. And to those who knows me well, I love eating this type of fish because it looks and taste like a Wild Alaskan Salmon. So ever since I found them being sold in a warehouse outlets like Sam's Club, I try to stock up on them.

Here you will find another way of cooking a Steelhead. For this recipe, I used one of the sauces I got from the Philadelphia Flower Show by the Bittersweet Herb Farm as my marinade. The Chipotle Peanut Sauce created such a beautiful glaze on my fish and it was absolutely delicious. I've been a big fan of Bittersweet Herb Farm especially their Balsamic Vinegars. So this year I decided to try their finishing sauces, jams among their product line and I haven't been disappointed yet.

With this dish, I served it with steamed green beans and lightly sauteed tomatoes, topped with pure black sesame oil and sesame seeds. Yum!

Ingredients:
A Fillet of Boneless Steelhead
Salt and Pepper
Olive Oil
Chipotle Peanut Finishing Sauce by Bittersweet Herb Farm

Green Beans
Tomatoes
Red Onions
Garlic
Olive Oil
Pure Black Sesame Oil
Sesame Seeds

Directions:
Season Steelhead with Salt and pepper. Place fillet of fish on a lightly greased baking pan with olive oil. Add a quarter cup of BHF Finishing Sauce - Chipotle Peanut on the fish. Marinate for at least an hour in the refrigerator.

Bake at 350 degrees for 20 minutes. Baste a few tablespoons of Chipotle Peanut Sauce on the fish. Turn the heat on BROIL and cook it for another 5 minutes until golden brown.

Sesame Green Beans:
Steam green beans for about 5-6 minutes. Heat olive oil in a wok. Saute onions and garlic. Add tomatoes. Then toss in steamed green beans. Remove from heat. Add about a tablespoon of Sesame oil. Coat well. Sprinkle with sesame seeds.
