One of the favorite breads I like to make in the summer is a Zucchini Bread. This is an easy recipe just like your basic Banana Bread or Carrot Cake. You can also serve this with a cream cheese icing...yum!
Ingredients:
3 eggs
2 cups sugar
1 cup Vegetable Oil (but I usually use 1/2 c. Canola Oil and 1/2 c. Apple Sauce [today I only have a Mixed Berry Applesauce, so that works, too!])
1 Tbsp vanilla
3 cups flour
2 tsp cinnamon
1 tsp baking soda
1 tsp baking powder
1 tsp salt
2 cups grated zucchini
1 cup chopped nuts (I used pecans for this recipe)
1 8oz. can crushed pineapple - do not drain liquid (optional)
Directions:
In a mixing bowl, beat eggs until foamy. Add sugar and beat well. Add oil, applesauce and vanilla. Beat in dry ingredients...flour, cinnamon, baking soda, baking powder and salt. Fold in zucchini, nuts and/or pineapple. Pour into 2 greased regular-sized loaf pans (or 4-mini loaves pan). Bake at 350 degrees F for about an hour or until cake tester run through dry. Remove from pans and completely let it cool.
