Wild Boar Country Style Ribs Adobo
Adobo is a classic Philippine dish. Quite flavorful with very simple ingredients. I made this the other day with some wild boar meat and it turned out incredible. My hubby and my brother, Marcus really enjoyed it.
Anyway, I just wanted to repost this recipe since my original blog on Adobo was under my "Reviews" page. I'm so thankful that Multiply added the "Recipes" section about a year ago. It certainly made me happy that I'm able to share my favorite recipes and some experimental dishes from my "test" kitchen with you online!
Enjoy!
Ingredients:
2 lbs Country Ribs or Pork Shoulder, cut into bite size pieces
1 cup vinegar
1/2 cup soy sauce
Cloves of garlic, minced
Black Peppercorn
Bay Leaves
Directions:
Add all the ingredients together in a large skillet. Bring to a boil over medium to high heat. Reduce heat and let it simmer for another hour or so until sauce is reduced and natural oils comes out. Serve over a bed of rice. Yum!
Another way of cooking it:
Combine all the ingredients together in a large pot. Bring to a boil over high heat. Reduce heat and let it simmer until pork is fork tender. Using slotted spoon, transfer pork to dish. Set aside. Increase heat to high and cook pan juices, stirring occasionally until liquid is reduced by half. Remove from heat and reserve.
In a skillet, heat vegetable oil over medium-high heat. Add pork cubes and cook until well browned on all sides to about 4 to 5 minutes. Add reserved pan juices and stir well. Cook until sauce is heated through.
