Puto (Steamed Rice Muffin/Cake)















Puto is another classic Filipino merienda or snack. It is made out of rice flour and other basic ingredients for baking, but instead of baking it in the oven, you just simply steam it. The result is a light and fluffy cake!

For most Filipinos, puto is best served with "Dinuguan" or blood soup, which I'm not a big fan of, however, my Mom loves it! I just like mine plain with a little bit of cheese and butter. Then, wash it down with your favorite hot chocolate!

Ingredients:
2 1/2 cups rice flour, not glutinous rice flour (There's a big difference between the two)
1 can coconut milk
3 1/2 tbsps. baking powder
4 eggs
1 cup sugar
2 tsps. vanilla

*Optional ingredients:
Shredded Cheddar Cheese
Salted Duck Eggs

***If you don't have the above ingredients, you can also use BISQUICK!!!

Bisquick Puto
1 cup milk
2 eggs
2 cups Bisquick¨ baking mix
1 cup granulated white sugar
1 1/2 teaspoons baking powder

Combine all ingredients and follow the directions below as far as steaming it!

Directions:
Combine all ingredients. Mix well. Spray muffin pan or silicone muffin cups with cooking/baking spray or grease them with butter or line them with banana leaves. I like to use silicone muffin cups, they're easier to use and and clean up is a zip! Fill molds until 3/4 full. Add topings if you like. I used shredded sharp cheddar cheese and sliced salted duck eggs for this recipe. You can also served it with freshly grated coconut or simply spread butter on top while hot from the steamer.

Other options include using pandan extract to make Pandan Puto or add Ube Powder to make Ube Puto, then just omit the vanilla extract from this recipe.

Have your steamer ready with boiling water. Steam them for about 25-30 minutes.
