
I made this potato dish to accompany our Wiener Schnitzel dinner...its aromatic scent can be smelled all over the house while roasting in the oven and it tastes good, too!
Ingredients:
4-6 Large Red Potatoes
Fresh Thyme
Fresh Dill
Chopped Garlic
Lemon Juice
Extra Virgin Olive Oil
Salt and Pepper
Directions:
Thoroughly rinse potatoes with a vegetable brush. Slice potatoes into 1/4 inch rings. Place in a large bowl. Add freshly chopped dill and thyme. Season with salt and pepper. Add chopped garlic. Drizzle with lemon juice and EVOO. Nicely arrange potatoes in a casserole dish. Bake at 350 degrees F for about an hour or until potatoes are nice and crisp in the outside, but still moist in the inside...
