Herb Cornish Hens with Maple Syrup Glaze















Excited about our homemade maple syrup, I couldn't wait to put it in a taste test. For dinner tonight, I decided to make cornish hens and topped it with a maple syrup glaze. What a delicious meal...moist, sweet and very flavorful!

**Sorry guys, but when I do my own concoctions, measuring is not a big part of my regime. Everything is just an approximation and whatever suits my taste...

Ingredients:
2 Cornish Hens
1 large onions, chopped
Fresh Sprigs of Thyme
Extra Virgin Olive Oil
1/3 cup of Maple Syrup
1/3 White Wine or Sweet Rice Wine
Paprika
Salt and Pepper

Directions:
Heat your oven at 325 degrees F. Take your unfrozen cornish hens. Rinse them under cold water then, pat dry. Rub paprika, salt and pepper all over the hens. Stuff it with chopped onions and fresh sprigs of thyme. Drizzle olive oil all over and inside of the hens. Boil maple syrup and white wine in a small saucier over medium low heat. Once it's boiled down (roughly about 5 mins), remove from heat and drizzle the glaze over the hens. Bake for an hour and a half at 325 degrees F. Serve with Couscous (coarsely ground semolina pasta) topped with butter and steamed baby carrots seasoned with salt and pepper.
