
It's a year today when my husband (now) proposed to me in Dove Key (02.22.07)! Time really flies when you're having fun, doesn't it? Last year, we were down in the Keys basking in the sun and having a good ol' time fly-fishing in the flats while this year, we're home and got snowed in. Well, not quite, but we got about five of inches snow!!! Whether or not we're in Sunny Florida or Snowy Pennsylvania, we're happy as long as we're together.
Anyway, I was expecting Barry to get home early today and I was right, he was home early due to a lot of patient cancellations. You see, I wanted to go out today and take photos of the fresh blanket of snow in the neighborhood and wouldn't you know, my husband had the same idea! As soon as he got home today, he was ready to take me and my cameras for a ride. I was thrilled! I donned my winter coat on, grabbed my cameras and off we went on his Defender! We had an exhilarating drive in the country. We stopped a couple of places where we usually fish and took some great photos! We just love the smell of the air after a snowstorm...
So, anyway, before going home we stopped at a local grocer to get a few ingredients for the Siopao I'm making tomorrow and got a head of cabbage for the Nilaga "Beef Stew" I made for dinner tonight (perfect for this winter day), but while walking around the store, my hubby saw bags of Imitation Crab on display and all of the sudden he had a craving for it (this is why they tell you not to shop for food on an empty stomach), but it's all good...anything for my honey! I guess he missed being in the Keys. Last year, after we got engaged, we had dinner at Snapper's Restaurant (next to Dove Creek's Lodge where we stayed at), sat at their veranda while we looked at the Tarpons swimming around and ate the most fabulous Seafood Platter!
To make the long story short, I ended up making an impromptu Crab Salad Sandwich for tonight's dinner! Not as elaborate as a seafood platter, but my Crab Salad Sandwich turned out great as my husband even asked for seconds!!! It must be really good, huh? So, here's my recipe...
Ingredients:
A bag of Frozen Imitation Crab, thawed
Mayonnaise
Stone Ground Mustard
Garlic Pepper Seasoning
Sea Salt
Potato Bread
Butter
Greens
Sliced Tomatoes
Directions:
In a bowl, shred thawed imitation crab into strings. Add about a cup of mayonaise (sorry guys, I hardly measure anything). Then, add a couple tablespoons of stone ground mustard (or any mustard you have in your pantry will do). Season with salt and pepper. Mix together.
For the first time, I finally used my Calphalon Panini Pan I got from Elena from our Couples Shower (Thanks, Elena for the nice gift!) last summer! Anywho, butter a piece of bread (one side only)...then grill it on a skillet or a panini pan on both side of the bread. Remove from pan when slightly browned and crisp. Add heaps of the crab salad mixture and top it with greens and sliced tomatoes! Serve with chips. So, there you have it...an easy crab salad sandwich!!! Enjoy! ;-P
