
On Fat Tuesday, I took advantage of that time and I made myself busy as bee in my kitchen. For some strange reason, I have fruits sitting on the counter that were starting to become overripe, so first thing in the morning I gathered all the Granny Smith apples from the counter and turned them into a heartwarming and crispy Apple Strudel. Then, my cooking obsession went on through the rest of the day. So, more recipes to follow after this, but just bear with me...
Ingredients:
1 pkg. Phyllo Pastry Dough
5-6 apples, thinly sliced
4 Tbsp Brown sugar
1/4 cup White sugar
1 Tbsp of Cinnamon - sprinkle as desired
1/4 tsp of Nutmeg
1/2 cup Raisins
1/2 cup Dried Cherries
Chopped Nuts (optional)
1/2 stick of melted sweet butter
Directions:
Follow the directions on how to use the Phyllo dough. The dough needs to be dampen by towels so it won't dry out. For this recipe, I did a lasagna type layering instead of a classic Austrian/German rolled strudel.
In a large bowl, mix apples, white and brown sugars, cinnamon and nutmeg together. Melt a stick of butter in the microwave. Butter a large baking dish. Then, place the first leaf of Phyllo dough onto the dish. Brush with melted butter. Do the same process for 3-4 layers of dough. Then, add slices of seasoned apples. Sprinkle with raisins, dried cherries and nuts. Repeat the same process. You'll eventually have 3 or 4 layers. Finish the top layer with the remaining Phyllo dough and brush thoroughly with butter.
Bake at 375 degrees for 30 minutes, or until golden. Serve with a homemade whipped cream and sprinkle with cinnamon sugar. You can also sprinkle it with powdered sugar. This is good with a cup of Viennese coffee, too!
